Just to clarify, but to get the most (mechanically) out of gestalt classes, what you're looking for is a minimum of overlap.
Minimum overlap, but you also want maximum synergy.
Monks have MAD, so your best bets are either classes that require some of the same stats, or classes that get extra mileage out of the Monk's stats.
Fighters and Psychic Warriors both have Armor Proficiencies that are useless to the Monk, but the Fighter can apply bonus feats (and full BAB) to the Monk's unarmed attacks. The Psychic Warrior, on the other hand, gets extra power points out of Wisdom and a lot of their powers are nasty effective for Monks-- like
expansion.
The Monk in question also has a high Charisma, so can get away with the Paladin combination-- all Good saves plus Divine Grace is just sweet, and Wisdom controls Paladin spells.
Everyone telling him to go Druid, go Druid, is missing the point that while VoP Monks are kickass, and VoP Druids are kickass, VoP Monk/Druids are
illegal because of alignment restrictions. (I waive them for my games, but not everyone does.) He also might very simply not want to play as a Druid, since it doesn't fit his character concept.
Monk/Cleric of Ilmater is alright-- divine spells based on Wisdom, and a Monk that can heal himself has a lot more staying power than a Monk that can't.
