D&D 5E What was the 'new format'?

Slipcases. Some other publishers have done something similar - e.g. Trudvang. This was pretty much what some of us settled on when they first announced it. It isn't all that different from a box set, but disallows non-paper elements, but comes with a sturdier case and still gives that "books-on-a-shelf vibe."

I'm also guessing that this is a bit of a test product, that we might see Planescape and/or Dark Sun published like this. The downside is that it less of a general setting, and more focused - so we might see a Tyr Dark Sun set, or Sigil for Planescape - but not the wider settings.

I assume it's the slipcase and cutting one book into three books. At first I thought it was three books at least 100 pages each, but this is much less exciting than that.

If the book and boardgame actually interoperate, now that's a real format change.
IIRC, they did say that for the Mass Combat rules for Dragonlance: Shadows of the Dragon Queen, you can either use the abstracted rules in the book OR the new Warlords of Krynn Battle Game. So pretty much the Battle Game is compatible with the 5E TTRPG. Which is similar with how Modiphus did with their Star Trek RPG and its optional Red Alert combat system/Battle Game that you can use their miniatures for.
