Towels. Lots of towels. You have no idea how useful towels are. Furthermore, they don't cost your character a single gold piece, if you can swipe them from the inn.

I also always carry two water skins ever since a hard lesson learned in our very first, 1E campaign. One of the characters was an assassin. We were hired as caravan guards for some merchants going through a desert. One night, a giant poisonous spider attacked. After we killed it, the assassin wanted to collect the poison to use later. He had nothing to keep it in, so he emptied out his water skin and filled it with the poison. Then we got seperated from the caravan in a sandstorm. We were wandering around lost in the desert. The rest of us had to share what little water we had with the assassin, because he had poison in his water skin.

Due to a 15 STR, this PC was at Medium Encumbrance, with the pack, but left some stuff with the mount.
 

I am trying to avoid making my current character into too much of a clutterbug (and want to keep him at light encumbrance for things like movement speed and tumble), so currently, my 2nd level elf barbarian is:

Wearing an Explorer's Outfit and Studded Leather Armor
Wielding a Greatsword or sometimes a Shortbow
Is Carrying:

+20 arrows
Backpack
Beltpouch
Flint and Steel
Silk Rope (50ft)
Whetstone
Waterskin
Trail Rations (2)
Bedroll
Sewing Needle
A few miscellaneous coins of various types. (Not sure how some of you are able to afford such vast amounts of stuff at 2nd level. :) )

With Wilderness skill, he could scavenge for more food and water. Also, he has the Endurance feat for times when he might have to do without a few extra luxuries or necessities.
