I'm surprised that this has not been an answer yet.

Potatoes are so versatile. I would be hard pressed to choose one dish. My mom's potato salad is the best, but even I couldn't eat it all the time. I can't remember the last time I had au gratin, but I remember it being one of my favorites when I was younger. Simply fried with some onions works for me.
 


Capped, peppered, and chunked.
Mushrooms, jalapeno, and ham.

Covered, chunked, peppered, and topped is my go to if I'm at Waffle House.
(Cheese, ham, jalapenos, and chili)

Greek potatoes can be awesome, and there was a place at UIUC that used to have great Irish Nachos made from waffle fries.

My favorite might be a double act - French fries with mashed potatoes and gravy for dipping.
 





Greek potatoes (as @Cadence posts above) are lemon-roasted with dried oregano - there are now variations with additional herbs but lemon and oregano are the requirement.

As for the best potato - roasted, mashed and baked are the trifecta for me.
