I will die on this hill. They aren't remotely the same thing. For a start, given the pictures he posted, those aren't even deep fried. That's like the one thing all fries should have in common. Those are roasted potatoes. Also good, but definitely not fries
I'm not disagreeing with you! I'm just saying given the constraints of the choices in the OP list, homestyle is the round hole that this particular square peg best fits...
 

Do most chippie shops use peeled potatoes? I assume that it's shop-dependent, or regional, but it could also be a "modern" vs "olden-days" thing.

I'll defer to UK/Commonwealth ppls, as it was some time back when I went (I've gone a few times). Most places probably don't hand cut stuff anymore unfortunately.

Do have family who were American ex-pats in the North for 20 years; they commented a lot after they moved back about the thickness of the fries here (ie not thick enough) when they ordered fish & chips in the US.

I don't think that the "home fries" he posted aren't deep fried - or if they aren't, that's definitely what makes them look strange to me. I was thinking of them as the only ones that are shown that still have their peel.

It's a stock photo, so it was probably AI generated by Google because of course. You're probably not even looking at a real photo, let alone real food.

But my search term was "homestyle fried potatoes," and didn't use the word "roasted" at all. I don't know if that's helpful or not.

The chips I got when visiting my Grandmother, made in beef tallow, which always ran the risk of burning down her kitchen, were objectively the best. Skinned potato, soaked in water then thick cut, dried, and into the fryer. Not from frozen. Closest match is the steak fries. But yeah, best chips.

That's what "homestyle fried potatoes" would look like in my mother's kitchen. Usually served with fried ham. Lots of ketchup.

They'd be served with scrambled eggs and bacon in my house. Maybe most folks grew up eating them fried in bacon drippings (delicious), but in my house they were deep-fried in peanut oil.
