The freezing also helps make them fluffy...the ice crystals break down the plant cells a bit, and the exterior gets crispy before the inside starts to cook.Parboiling (5 or 6 minutes, tops... pat dry afterwards!) French fries or home fries before either frying or baking is a must in my book. Crispier exterior, softer/fluffier middle.
