I’ve gotten so used to just having fries with only salt on them that having ketchup just seems wrong to me. I’ll do malt vinegar, truffle oil, Parmesan, garlic and oil, or best of all..mayonnaise, but hardly ever ketchup anymore.
 


In all honesty, my answer to the poll (or the OP) is "yes, please" - I'm pretty happy to eat any or all of them. Not sure I'd even venture to name a "best".

The best fries I've ever had came in Antwerp, where I was lucky enough to visit Firuur No.1. If you have the opportunity, it's well worth a visit.
 

I've been using salsa for the last few years, because of the stupidly high amount of sugar in ketchup, but I think I'm going to look into this as a possible substitute as well. Thanks.
There’s some sugar in steak sauces as well, but not nearly as much as ketchup.

Another condiment that should work is aji:

The Colombian place I frequent has 2 versions of this- spicy and mild. While spicy holds no fear for me, the mild simply tastes better IMHO. Cleaner.

Their mild is essentially very much in line with that recipe I just posted- onions, parsley, tomatoes, white vinegar, salt and water. It’s proven itself in empanadas, green plantains, sweet plantains, and- most importantly for this discussion- fried yucca.

Should work great for fries.

These ones were good. Dipped in peppercorn sauce in the schnitzel. For pub fries they're a solid 8/10.
