Yes, 3.0 rules have toad familiars granting +2 Constitution instead of +3 HP. The OP said his group plays under 3.0 rules.
And Elemental Savant is certainly a fine choice in 3.0. The only level it doesn't advance spellcasting for is at 10th-level in the class, and it gives you various immunities and resistances, save DC increases, caster level check bonuses, and such. Also, note that while they must first learn 3 spells of one energy descriptor besides sonic, they don't have to actually learn 3 of the same energy type associated with their element; you could learn 3 fire spells beforehand to qualify, then choose Earth/Acid as your element for the prestige class. You do have to choose Acid, however, for your Energy Substitution feat in order to become an Earth Elemental Savant.
You might instead consider the Pale Master, though. It'll make you tougher and somewhat melee-capable with its Undead Graft and all. Let you summon and animate undead, and stuff. It requires nongood alignment though, and it sacrifices half caster level advancement (only odd-numbered levels in Pale Master increase spellcasting ability). It could be fun though.
