To be fair, you'd have to split this up into three categories: land, sea and air.

For D&D (SRD only):

Land: Light Horse, Light Warhorse - 60' (Cheetahs can Sprint at 500' when charging)
Sea: Porpoise and Giant Squid - Swim 80'
Air: Eagle - Fly 80' (Of course they can dive, but so can any flying creature, pretty much)

There you have it.

True, but it does mean you can slap them on the forehead, repeatedly, and they won't be able to strike back in time. I have seen this demonstrated.

There you have it.
Which, of course, makes our buddy, the peregrine falcon, look more shafted than the 3.0 ranger. If anything, a peregrine falcon should have hawk stats but with the sprint ability of a cheetah when performing a diving charge.

Since Peregrine Falcon is not on the list, what's stopping you from running that way? Or has WotC published them somewhere?
