Now the Graze mastery is a no brainer, but it lacks any connection to weapons used or defense skill of the target and seeking more AC from cover and/or disadvantage.

New graze:
when you miss your target AC by 5 or less, you deal half damage.
You cannot trigger any on-hit effects like Sneak attack, Smite, maneuvers, Hunter's mark, Hex, Conjure minor elementals(hehe), etc...
Things like weapon enchantments, fighting styles, rage or similar bonuses would work, but in the end they would be halved after rolling for damage.

this version respects both targets defense and attackers skill in the way that it still allows for attack to do nothing and that skills narrows or widens the window of doing nothing.
So looking for advantage/disadvantage/cover/buffs/debuffs all still affect percentage of doing 0 damage.
In normal attack/AC range, Graze will trigger reliably on 25% of attacks, unless hit chance is very high or very low.

How often do you think a PC misses the bad guy and how often is it more than by 5? Is the graze base weapon damage and half damage option about the same? If so, is it just more figuring and time wasted for not much gain?

It seems like a decent option, but without doing the math I do not know.

expected miss rate is 40%, and I would say depending on target and skill of attacker, give or take 10% of that.
so about 30-50% miss rate.

but is someone is in fullplate+shield and some other AC buffs so miss chance vs them is 80% is somehow a downer that you suffer damage in those 80% of the time. if you suffer some damagein 25% of the time and zero damage in 55% of the time, then you feel reward for having that high AC.
