It did, but it also allowed you an "out" option to the fight by being able to convince it to move somewhere else instead IIRC.

CR3 is swingy. That is the biggest problem. Some creatures can't do anything if you can keep them at distance. Or disabled.
In 5.5e everyone either has cantrips or weapon masteries and one extra feat. Those are game changers. This enables them to have a chance against a CR3 monster.

But what people said:
I think there should be no party vs 1 cr 3 monster fight. Better use a CR 1 and some minions of CR 1/8 or 1/4. Or CR2 and one minion of CR 1/4. This will mame the fight a little bit less swingy.

Give your players a level up. The change from level 1 to 2 usually has no big additional choices except or a few extra level 1 spells or invocations. No choice of subclass.
At level 2 we look at 4 to 10 extra hp. Which means a lot more distance to insta kill. A CR 3 monster gets manageable.

I agree with Ungeheuer Lich. A CR 1 boss with some lower CR helpers.

I give m PCs extra HP at lower levels, but I also increase the XP requirements to reach Levels 2 and 3.

Never assume that a low-level PC will make any save.
Never assume that a PC will be at full health.

Anything able to deal 10 or more points of damage in a single go can outright kill a PC, and there are no options to bring them back at this level.

Creatures that rely on multiple attacks are safer because you can always go for another PC if you drop one. Or just use more enemies rather than relying on high-CR ones.

Or use enemies that are defeated outside of combat, through puzzles or the like. Fey creatures setting riddles for example.

Heck, in 2024 even the lower-CR monsters can kill a first level character outright without breaking a sweat. A CR 1/2 hobgoblin does on average 12 points of damage, enough to take a level 1 character down, and with a crit it will almost certainly kill just about any 1st level PC outright.

If you're running scenarios for lower-level PCs, you can use tough foes but need to provide the proper context to give the heroes a chance to survive, evade, and/or escape. That could include NPCs helpers, cover, distance, etc. I was thinking of the situation at the start of Hoard of the Dragon Queen where the newbie PCs can confront a hostile blue dragon. The module stresses that the creature can kill any PC easily, but it gives the players a chance to encounter a foe that they won't have a chance of facing on a fair footing for many levels; this is the sort of experience that can define an adventurer's entire career.

Party size matters too. I would not put a party of four against a CR 3 monster. I would put a party of five against some CR 3 monsters, like some Hatchling Dragons, but ONLY as the last fight in the adventure, since they will need a long rest to recover from it. I would be more willing to put a party of six against most CR 3 monsters. I would be willing to put a party of seven against two CR 3 monsters, but not at the same time. "An hour after you have defeated the evil Dragon [apply the benefits of a Short Rest] her twin sister flies into the room. Roll for Initiative!"

CR's not a limiter. It can be any CR so long as the movement is such that they can pick up their one shotted dying party member and run without out it catching up to them.

CR 2 or 3 is pushing it. Accuracy isnt great and a crut can outright kill a OC with a ok to decent roll vs max damage or close to it.

Depends on monster as well.

Like Zardnaar + few others, I think CR 2 (or broken up among several monsters) is prudent; like a white room & PCs as you described.

I could see CR 3, but if I were putting something like this together, I'd advocate for some environment/feature that could be leveraged by PCs to their benefit.
