Hmmm...forgot about John Wick. Although I guess that's no longer a trilogy. Too bad.

In no particular order

Mission Impossible (Ghost Protocol, Rogue Nation and Fallout) - Just edge of your seat action with a great cast and tight dialogue

Lord of the Rings Trilogy - Masterfully made.

Unbreakable Series (Unbreakable, Split and Glass) - Fell in love with the story, the idea was so novel for me

Back to the Future I, II and III - Time traveling fun with a lovable Michael J. Fox

The Dollar Trilogies - Spaghetti Westerns, yes please

I have not seen (and did not even know of), but I'm very curious to see:
Colors Trilogy (Red/White/Blue)
The Vengeance Three. Sympathy for Mr. Vengeance, Oldboy, and Lady Vengeance
Time of Day Trilogy (Sunrise/Sunset/Midnight)

I have not seen the 3rd Guardians of the Galaxy yet, so I could not rightfully include it.
Honourable Mention: The original Pink Panthers with Peter Sellers and John Wick 1-3 (hated 4)
 


The Three Flavours Cornetto trilogy - Shaun of the Dead, Hot Fuzz and The World's End. Just the perfect mix of comedy and being both and ode to and satire of the three genres of film. They can't be improved on.

Kung Fu Panda - Perfect blend of action, comedy in an animation package, it was this or Toy Story and hard to pick between them but everyone had mentioned Toy Story already.

Pirate of the Caribbean - Visually stunning, amazing stunts, fantastical story, and amazing CGI, Johnny Depp was born for the role.

Captain America - First Avenger, Winter Soldier and Civil War. Probably some of the best Marvel movies made, it was close with Guardians of the Galaxy.

Man with No Name - I thought I pick a really classic one to finish off, a young Eastwood already a commanding presence on the screen, excellent score, setting westerns don't come much better.


Honorable mentions - Alien 1, 2 and 4. Back to the Future, Toy Story, Terminator, Spiderman (of all eras).

And of course Highlander gets a mention even though they never made any other movies.
