This is why the brain collector was one of my favorite basic D&D monsters. Especially since it was first presented in "Castle Amber." First, the party realizes that it steals brains. Then they figure out that it's the brains of wizards giving it supernatural powers. Then it occurs to them just where the thing's been trapped all this time...
So how about this: the zombie does grapple damage, as described above, until the person is unconsious. Then it's finally got access, and can start eating the brain by draining permanent intelligence points.
After a while, the person won't even know to seek out a cleric and explain that they need a restoration spell (or would this call for regeneration instead?)
