The concepts of the Cavalier and the Witch can be made with Fighter and sorcerer. I wouldn't include them. And no infernal for sorcerers, but the elemental and the draconic bloodline. Infernal makes them look evil and their connection to dragons is a classic....
Races:
Human
Dwarf
Elf
Halfling (LOTR appeal, you know)
Classes:
Fighter
Cleric (limited to only some of the domains, and removing any explicit references to specific deities; you pick two domains, basically)
Rogue
Wizard (Universalist, with maybe Illusionists and Necromaners as well)
Sorcerer (Arcane, plus Fey, Infernal only, I think)
I'd also be tempted to include the Cavalier and the Witch, actually. Neither requires a lot of supporting rules, and both are pretty classic archetypes.

Also I think Conjuration for a Summoner feeling would be more heroic than Necromancer (who cannot animate dead the firt 6 lelvels anyway).
Hm, the humans are the only race who can get a bonus to str.
Maybe the box should include the the pathfinder iconics as pre/sample builds. (Or maybe some new, making the rogue a halfling, the cleric a dwarf...)
Now I'm worried. The 3.0 set wasn't bad, but not able to make your own character was a bummer. But it included rules quicksheets, a map and counters.No worries, we definitely had a list of products NOT to base ours on.
