They didn't miss them, but they did make them difficult to find. See Paraxis's reply directly below yours.

That is my biggest complaint with the 5e books. No reference lists to allow you to find what the game expects you to find. These are just a few of the lists that seen crucial and yet are missing:

Spells per level by school of magic
Creatures by CR
Creatures by type
Creature lists for conjure spells

It is a huge source of frustration.

So you can summon what ever elemental you want, but if you want a water type CR 1/4 or pure fire type etc...
and I want CR 1 all I get is a fire snake but I need a water type, etc..

The only thing you get to choose is the HD range. Excuse me, CR. The DM chooses the rest, probably based somehow on the environment.

based somehow on the environment, but if the DM (Me) can only choose 1 creature "Fire Snake" for CR 1, then I'm stuck with it and the underwater spell caster is stuck with it.
So I created the Small Elementals to add some variety to conjure small elementals
