Huh. Did he have a poor Con? Or do you rule that a natural 1 always fails a save?

By the book, a level 17 barbarian with Con 16+ is effectively immune to ghoul paralysis.
Not immune to ghoul damage, though, and unless that Barbarian's AC is mighty good 8-on-1 has trouble written all over it.

I guess if he wasn't raging, maybe...? The odds favor the barbarian by my math. A 17th-level barbarian has an insane number of hit points, which are effectively doubled by raging. He can soak several rounds of attacks even at 8-to-1 odds, and he will shorten those odds very rapidly.
