ventriloquism: what skill would it fall under & how might it be used in a adventure?
curiosity is my main reason for asking really, but if you have a serious answer I won’t be affended at all.

I'd suggest a Charisma (Performance) check.

It's problematic since so many spells accomplish the same effect: Minor Illusion, Prestidigitation, and Message could all replicate Ventriloquism effects.
