Not only that, animals have got better senses than humans. This could be important if the horses in the night camp can sense an intruder or predator.

And some species have got higher strenght. A simple cat can jump a wall better than humanoid. In the real life a chimpance can be x2 or x6 stronger. A gorilla could be x8 times. And there are animals with more body mass: bulls, bears, elephants, donkeys, rhinoceros. If a PC with polymorph spell can shapeshift into a powerful animal, this could do certain things, for example climbing to the top of a tree in a short time.
 

I don't think my DM is going to allow my PC to shapeshift into a powerful elephant and then climb to the top of a tall tree in a short time....

most animals and plants can regenerate to some extent (even humans), it is simply called "healing." However, if you are talking about regenerating lost limbs, then crocodiles cannot do that. Some lizards can regenerate lost tails, but not limbs. The real champion vertebrate regenerators are amphibians. Some of those can regenerate lost limbs.

On the flip side, most animals actually have terrible stamina compared to humans.

Its one of our secret evolutionary advantages. Human could often just run down other animals, we weren't as fast, but we could go much longer than they could without fatiguing.

What about camels ?
I think that the main difference between humans and animals is that animals' stats range 3 to 25 , while humans ' stats range 8 to 18 ...

Unfortunately a lot people have horrible stamina these days too.

Though to be honest, I think some animals have pretty remarkable stamina. My dog typically only goes for a about a mile walk each day. However, when my son comes home once or twice a year he will take the dog for a 5+ mile run. No warmup, no training, he just runs and keeps up with my son. I don't know many humans you can do that without some training (at least not at the speed they were running).
