I understand the generalness of it. People want more stuff than the stuff they are offered.
But back in the before times getting the things you wanted was why you went out into the world to earn those things in various character sheet related ways.
The very idea of a 6th level party taking the time to darn their own socks and make their own cutlery just seems to go against the grain for me. D&D needs its Martha Stewarts too i guess.

Game on my friends.
Well, sure, when you create an intentionally silly hypothetical like that, the result is also silly. ¯\(ツ)

Why do adventurers want to craft things?
I think the rules are there, because 3e had crafting rules, so there need to be crafting rules.

But they are saving a few gold coins by doing that! Totally worth having a rules system to only craft mundane stuff with (unless you're a caster, then you can make portable spell slots, excuse me, scrolls).

I wish it was limited to tools with direct adventuring-related uses (Alchemist for explosive vials, Herbalist to make potions, etc), but instead we have Cobbler's Kit as an option. And while good travelling boots are crucial, that's what towns are for.

That was my point, I find the whole concept silly.
I'm not judging anyone, if you want to make stuff....make stuff.
From a storytelling point of view it makes little sense to me that an adventuring party carries around all the gear needed to make more gear. Sure the argument could be made that they just buy the gear making gear in the town they are engaging in the down time. But i would then respond to that with; can't you have the gear making gear maker make the gear you want?
What happens when you leave that town? Does the party now have a wagon train of not only the gear making gear, but all the gear they then made with that gear?

Everyone's always so serious and argumentative and pedantic...this is just my way of getting in some comedy before all of the usual arguments get brought up.

To all of the crafters out there enjoy what you enjoy just remember to pay your taxes.
