So far appears to be variants of existing monsters (like the empyrean iota) rather than completely new ones, but we're early into previews at this point.

Yes, but we haven't seen a lot of new statblocks. There is a video out there with the CR 20 animal lords, another with a new type of cyclops, and another with a new type of empyrean. The arch-hags are mentioned again, but no stat block.

The iota is completely new really. It is CR 1 vs CR 23 for the typical Empyrean

That would make sense, the mythological precedent isn't restricted to tigers.

The iota is completely new really. It is CR 1 vs CR 23 for the typical Empyrean

And the Iota isn't really even a weaker version of an Empyrean. It's a living divine thought. Interesting idea, very Gnostic.

And intentional to make up for the removal of resistance/immunity to nonmagical bludgeoning, piercing, and slashing damage.
