Azer were already Elementals in 2014. Merfolk I kind of expected to be Fey, that’s probably how I’ll represent them in my games to separate them from the Tritons, who are already tied to the Elemental Plane of Water. Aarakocra kind of makes sense, given their connection to the Elemental Plane of Air, but I agree that Lizardfolk being Elementals is weird, even if they come up with some lore justification for it.
It is a bit out of left field, but it gives Lizardfolk a bit of a shtick beyond being scaley Orcs.

Not all lizard folk:
Sure. It actually makes more sense when you read it.

For lizardfolk, the conversion guide suggests that a regular "lizardfolk" would use the "scout" stablock (and, I presume, any other humanoid NPC block, for various humanoid-lizardfolk.

The MM page for Lizardfolk explicitly states that these are Lizardfolk who live in jungles suffused with primal magic or who have undergone rites to enhance themselves with a connection to the elemental plane of earth, and are the Lizardfolk Sovereign and Lizardfolk Geomancer statblock.

In case you missed it, Fitz clarified in another post that general lizard folk are not elementals, but the ones presented in the MM are from exposure to elemental forces.
To dovetail into the questions of "are all Goblins Fey, are all Gith Aberrations"...this pretty clearly signals thst WotC doesn't mind having inconsistent Creature Type within a Species.

I also really, really think WotC is cooking up an Inber Planes Setting product.

I've picked up the 2024 MM today from my games distributor, for sale tomorrow at my comic and game store.

But we're closed today, so I've got some time to answer questions!

If you have any burning questions, ask away!

(And others with the MM can feel free to help me answer. I like help!)
Awesome!

Do "Fey Eladrin" Elves have statblocks or mention of any kind?

That could be neat. I don't think there's been an actual elemental realms source book since 4E's The Plane Below from over 15 years ago.
Yeah, there is juat an awful lot of very specific new Inner Planes info in the DMG and MM, same with the Feywild.

It creates interesting flavor. The Fey Goblin is native to the Feywild. The Fey Humanoid is transformed by the planar characteristics of the Material Plane.

Similar goes for other examples of planar transformations among members of other species.
