I can only presume you haven't had scalloped potatoes prepared properly. My goodness, it's cheese mixed with potatoes!
One time in grade school I got hit in the head by a potato during Field Day, that was a bad potato.
Thwt was a bad experience around a potato, however I am sure that potato would have been great if you subsequently cooked and ate jt.

You’re talking about cooking methods not varieties.
It does indeed make a huge difference whether you use a waxy or floury potato - the former for gratin or fries, the latter for roast or chips. Maris Piper is a reasonable all-rounder but I prefer King Edward for roasting or chips.
