After their duel, Palpatine subtly used the Force to push Anakin into decapitating Dooku instead of taking him prisoner. It's entirely possible he had also been subtly hampering Dooku and/or empowering Anakin during their fight.
I'm not 100% sure about that - it looked to me more like:

Anakin: Shall I cut his head off?

Palpatine: Sure, go for it.

It felt more like an indicator of how much influence Palpatine had over Anakin, which is a major theme of the film and something we hadn't seen much of previously.

*Anakin has Dooku at his mercy
Palpatine (friendly): "Good, Anakin. Good!"
Palpatine (serious): "Kill him. Kill him now."
Anakin: "I shouldn't."
Palpatine (Sith voice): "Do it."
*Anakin does it then feels bad about it.

I'm not arguing that Palpatine forced Anakin to do something he didn't want to do. It's more like he subtly used the Force to push Anakin to give in to his anger, hate, etc.

That’s an interpretation, sure.
Yes, one based on Palpatine's body language and tone of voice in that moment.

He's all congratulatory when Anakin defeats Dooku. Then he turns serious and tells him to kill Dooku. Then when Anakin hesitates, he pulls out his Sith voice and orders him to "do it".

I'm sure there was even a name in what's now Legends canon for that Sith voice manipulation power, but I can't find it with a quick google search, and I'm supposed to be working ...

Those Force manipulation powers are more common than you think.

Dun Moch I think.

RotS novel is really good. I dont recall of Palps used it. If he did it happened off screen.

Anakin had been juicing up on darkside ju ju juice. We saw tgat onscreen and Yoda mention it in the OT.

Yeah, that's the one!

Agreed. I just went and checked this scene in my copy. I have to admit that it supports the "Palps giving Anakin permission" interpretation. However, I prefer my interpretation for the movie scene. There's a reason Palpatine switches to his gravelly Sidious voice when he tells Anakin to "do it", and it's not just "this is me giving you permission". It's more of a "this is me pushing you to let go of your self-restraint and give in to your anger and your hate so you'll fall further into my trap".

At that point he had to make a DC10 persuasion check. 15 tops.
