I don't fear sharks so much since they don't come on land. That's why H.P. Lovecraft invented the land shark, and we've had bloody rituals to become shark god spawn ever since.
I'd personally give the Tauren the WIS bonus over the Orcs, I think they're more of a peaceful and wise race, and the Orcs must have a pretty bad Will modifier to get enslaved by the Burning Legion.
