Okay. I "cheated". My prompt was "Pixar Animation: A centaur holding a spear. Full length on a white background."
I got this one by only changing Pixar Animation to "Detail Digital Art"

But as soon as I try to make it more dynamic (say, with a background), the horse and man fall apart into two separate creatures, even with the word Centaur in the mix.

Ya, I got similar results (I kinda like the horse headed human but that's not what I was looking for).
Edited to add: When I used the prompt [centaur, noble, natural jewelry, powerful, wild, dynamic pose, side pov, high detail, digital painting], it gave me a pegasus instead. LOL!

I figured I would see if I could create a Carrion Crawler. It took several tries but I got something I like.

I've been trying to get both centaurs and wemics (liontaurs) and... well, if you do Centaur and nothing else, often it'll do fine. Trying to do any out of the ordinary centaur (in armour, wielding certain weapons, rearing as if to charge, unusual locations) will typically yield some bizzaro output, or just give you a knight on a horse. With other taur types I typically get very malproprotioned oddities, or equine bodies with the anthro-leonine torsos. It's not been great. I think, for the moment, using a generator that allows for inpainting as well as img-2-img will yield better results through many steps of work (such as shown at the bottom of this post: https://www.enworld.org/threads/dall·e-3-does-amazing-d-d-art.700174/post-9163339).
