There were handbooks for Bards, Barbarians, Druids, Paladins and Rangers which would give you more to chew on than the racial ones. The racial ones are primarily fluff with very little in the way of crunch for you to convert.

Doing the Psionics one is impossible without an existing class.
The complete book of ninjas might be possible since it wasn't really all so different from the Rogue that you could just treat it as a second Book of Thieves for the most part with some stuff for Fighter, Monk and Wizard mixed in there.
