I think easter eggs are often found accidentally when you're scanning the program code for other things:
- looking for ways to circumvent software protection
- looking for cheat codes
- trying to understand the program to create your own cheats, or at least get better playing it, or simply to find out how it was done

I know I've spent a lot of time staring at the hexdumps of Diablo files to figure out how to modify monster attributes and at Diablo 2 trying to understand how treasure classes work.
Looking over resource files you may find graphics or text that doesn't seem to get used in the game, etc.

I guess it's a bit like disassembling an engine, or a clock, or whatever to figure out how it works.

If you're into that kind of thing it can be more fun than actually playing the game.
