A Cyclops Ghoul

I am not very familiar with creating creatures. Can someone help me out here?

I have a Cyclops NPC (Deities & Demigods pg 132) that turns into a Ghoul. How do I go about creating this creature? I'm not sure if the Cyclops template will lose ability scores or qualities when he turns into a Ghoul.

I'm not looking for someone to build this for me (unless you want to). I just need someone to point me in the right direction. Is there a guideline that tells you what you would keep & what you would get rid of? Or do I just combine the 2 races together and use the highest stats from both sides?

Isn't there a Ghoulish template or some such out there? I think there is, but I don't remember where. Wherever it is and whatever it is called, you can apply the template to create your own custom ghouls--I know there's 3.0 templates for skeletons and zombies in BoVD (though in 3.5 the templating for those two became core--yay!)
 

Monte Cook created a 3e ghoulish template. There were several others also included in other sources, including one in Dragon, I believe, although I can't remember the issue number. Masterwork Monsters: Rise of the Ghouls from Clockwork Golem Workshop had one in, as did Reality Deviant Publications' A Touch of Evil III: Gnolls (there was a ghoul gnoll in there).

My first thought is the Ghoul class in Libris Mortis, but I am not really familiar with how this works. Is this something you could add to an existing character? Say a 10th level fighter is killed by a ghoul and rises as a ghoul a couple nights later. Can he start taking levels in the ghoul class, or were these intended for starting characters?

EDIT: Never mind...I answered my question.
 

Dragon Magazine has a ghoulish creature template that can be used to turn a humanoid, monstrous humanoid, or giant into a ghoul. I don't remember which specific issue the article was in, but it was reprinted in the Dragon Compendium v1.
