A Root Maze

No, it doesn't. It used to be a prison for a demi god of nature when it was a large metal structure. When she was freed she used her considerable magic to change the prison into a very large tree.

I think I'm going to just have a simple root maze and then have a mosre sustainable adventure close by using one of the DCCs.

I'd use the terrain around the tree roots for it (large and small caves, rocks, temples built in, subterranean rivers, tunnels created by creatures that adopted it as their home), not the root tubes. As mentioned before, just the roots won't make a labyrinth.

There's a 3.5e adventure from Dungeon magazine print version (so a while ago) that involves the PCs navigating inside a giant evil tree. I'm pretty sure it's an epic level adventure (level > 20 in 3.5). And I'm pretty sure it was within the last year of Dungeon's print publication.

Maybe this will jog someone's memory for the name or issue number....

If I'm thinking of the same adventure, it's not epic level; according to my notes from when I ran it, it's for 18th level PCs (I may have changed it a level or so, though): Root of Evil, from Dungeon #122.

The free online supplement for that issue is here, and should contain the maps for Root of Evil. Note that the map doesn't include any kind maze, IIRC.
