The type of art that most evokes D&D for me is a fantasy landscape of some sort - be it a countryside with a castle in the distance, or an elvish house in the woods, or a series of endless bridges over a mist-shrouded sea of nothing - without any people or characters in it at all; because that's what gets my imagination going.

If I see a picture and think "I could put an adventure there" then it's gold. :)
 

I think artwork depicting scenery and "nothing happening" are very inspiring. One of the things I disliked about 3e's art direction was that it was mostly action and character based, often just a close up of someone with their mouth open.

I love art that tells a story. For example, this cover of Dragon magazine:
