I'm surprised that no one has mentioned Howard's Conan stories. My favorite is definitely Zelazny's Nine Princes in Amber (and the rest of the Amber books to a somewhat lesser degree).
Steven Brust is also good at "single person vs. many lessers" scenes, but they tend to be more "gutsy person gets in way too deep over his head, and through a combination of skill, luck, and sheer chutzpa manages to take many opponents out, complete his job, and survive to escape".
