D&D 5E Can you Dodge and Attack on the same turn?

I would not rule it quite that way.
Yes, dash means you ride the mount farther. However, opportunity attacks simply do not apply to creatures riding other creatures, disengage indirectly benefits the rider as the mount won't provoke attacks. Finally, I find that anything that makes the mount a more attractive attack option is worse for the player who has a mount, as it causes their mount to die faster and more often. Dodge should only work for the mount as it draws fire back to the PC, who typically has a better ability to absorb blows.

It's ambiguous, you way of ruling is just as valid as mine by the rules. I'd play in your game, but you haven't convinced me to run it that way. To me, it sounds like you are saying "the benefit of spending a feat is that it's more likely foes will attack you instead of you mount" and that doesn't seem in line with the power granted by other feats. If you spend a feat in 5e, the default power level is mastery. So I'll take the ambiguity and rule in favor of making the PCs awesome. And the rival NPC that I give the same.

You can Dodge and Sneak Attack in the same round as an Arcane Trickster with Haste. Any class can do similar, but the Rogue can do it best due to Sneak Attack.

Yeah I would only apply the dodge to the mount. To also apply it to the rider would be OP in my view, and thus undesirable.
