Unfortunately you can't sunder an item with an AoO, which I find kind of bizarre myself.
? "You can use a melee attack with a slashing or bludgeoning weapon to strike a weapon or shield..."

Yup, but not as part of a Charge, Full Attack Action, or AoO.
Table 8-4 includes a footnote mark beside actions that may be part of Charge, FAA, or AoO, and give them an action type of "Varies" - Trip, Grapple, and Disarm.
Strike a Weapon is a standard action, and lacks the footnote mark.
I think this is known, in technical terms, as an "oversight".

Alternatively, they figured that someone getting four attempts to disarm you in a round wasn't as big a problem as someone getting four attempts to whittle away the hit points of your expensive magic sword before you have a chance to react...
You give them far too much credit.

Perhaps. I'm not too worried about the reason - the table is unambiguous.
