Undead are "Proficient with its natural weapons, all simple weapons, and any weapons mentioned in its entry."

Also, "A zombie retains all the natural weapons, manufactured weapon attacks, and weapon proficiencies of the base creature."

So unless the exotic weapon is mentioned in its entry, or the base creature was proficient, it can use it... but it will take the -4 non-proficiency penalty.

As far as disarm and trip go, there's no rule against it... but remember, "Because of their utter lack of intelligence, the instructions given to a newly created zombie must be very simple." So it will depend on what their instructions are, and whether disarming or tripping is considered very simple...

Use your best judgement. Human commoners most likely would not be proficient with any exotic weapons, unles the weapon sees common use in that are of the world.

What they can't use are tactics - they have no intelligence score. They don't think, or adapt, or use cunning. Zombies are very straightforward, in and of themselves.

If a zombie is inclined to trip and attack someone, it's going to do that every single time it gets the opportunity. If it isn't, the notion will never occur to it. With no intelligence score, zombies function on the tactical level of beetles or ants.
