Crafting rules are generic by necessity. Yes, it leads to a lack of realism, but the need for a (relatively) simple game mechanic often exceeds the need for realism. Because of this, addressing item crafting time on an item by item basis is simply beyond the scope of the rules. However, if you are looking to house-rule more realism into crafting time, I would suggest an internet search for the home page of some craft enthusiast in the relevant field.
