While you don't know Brue's HP total yet, I can say that she still feels somewhat okay (greater than 50% HP total), aside from having a nightmare creature smothering her face.

Drawing forth energy she didn't know she had, the genasi managed to stab at the creature attached to her head and score a glancing wound. At the very upper edge of her hearing, she heard what sounded like a shriek, feeling it more in her teeth than anything. With a loosening of tentacles, the creature detached itself from her head. Brue could hear the faint sound of flapping nearby. She was certain that she had only managed a brief reprieve.

It is now Brue's turn. You are correct, Brue has a +5 to attack/+3 to damage. If she chooses, she can also use the longsword two-handed since it is a versatile weapon, which increases her damage die from 1d8 to 1d10. I also should mention that I think you have a point of Inspiration you can use if needed.
[section] Brue gulped down the free air and looked around, trying to spy whatever beast had beset her. She ignored her dropped torch for now and focused instead on grasping Greycastle's longsword in two hands. She turned around in place, attempting to locate her attacker.[/section]

Just saw your edit. Didn't Brue use her Inspiration point to argue on behalf of lifting the quarantine when she treated yesterday with Captain Holt at the gate?
Brue held Greycastle's longsword in both hands. For some reason, it just felt right. She took a few practice cuts, sure that the creature was hovering nearby to attack. With her reactions honed and expecting attack, the genasi slashed out at the first touch of a tentacle on her throat. Her teeth ached again as the creature cried out in pain, the sound barely heard at such high frequency.
To her dismay, the creature was not yet done and redoubled its efforts. Tentacles wrapped around her throat once again and began constricting as the leathery folds encircled Brue's head once more.

Oh, that's right. With that said, now that you reminded me why you spent it, you would have simply earned it back. So you are currently Inspired, in the event you want to use it. Brue is still fighting a creature she can't see, so the rules actually indicate that you need to identify where you want to attack. Since you are forewarned, I'm going to rule that you can ready an action to swing at the same time the creature attacks you. Now that you have an idea of what to expect, it shouldn't be hard to point the sword in the right direction. The attack is still at Disadvantage, because you are still considered blinded.
[section] Brue shook out her shoulders. It felt good to swing. The sword felt nice. She liked the way its tang sliced through the air. The genasi stood her ground, but ducked and wove from time to time, trying to confuse her attacker. Her meager effort at obfuscation failed, however, and the beast latched itself once again to her head. The feel of its tentacles clasping her throat and squeezing made Brue's heart constrict in fear. She stabbed wildly with the longsword, using the flat of the blade, the sharp edge, the tip to hack and saw at the leathery folds of the creature.[/section]

Brue hasn't yet reached the point where she would disengage. I imagine, however, that point is rapidly approaching. For the time being, if permitted, she will use her longsword to attack the monster.
Given Brue is a bit of a brick and I imagine she is also stubborn, I think Brue would try one more time to use the longsword to slice at the creature while it engulfs her head. This attack should go with Disadvantage, correct? If so, I think we can simply use the (admittedly poor) rolls I just rolled? I'll amend the text portion of my post, however.
