I believe you are not allowed to have more than one of each infusion. So if you have three infusion slots they all need to be different.
“Replicate Magic Item

Using this infusion, you replicate a particular magic item. You can learn this infusion multiple times; each time you do so, choose a magic item that you can make with it, picking from the Replicable Items tables below.”

You’d have to have 3 of your infusions known be Pipes of Haunting to pick it 3 times, but it does work.

Easy to miss, but:

You can infuse more than one nonmagical object at the end of a long rest; the maximum number of objects appears in the Infused Items column of the Artificer table. You must touch each of the objects, and each of your infusions can be in only one object at a time.

Also @Zardnaar when you state 'the Sorcerer and Paladin are the main damage dealers' that makes me really worry that your adventuring day budget and encounters per long rest are off.

Both classes are notorious nova classes.

It sounds like you're running a game that lets them nova.

Can your bard/cleric supply the fighter with a magic weapon, and deal with locks and traps better than a rogue, and identify that artefact you just found, and send a bomb carrying drone into the dragon's mouth to kill it from the inside, and make a bag of holding to stuff the dragon's treasure into, whilst brewing up a solution to the room flooded with poison gas you need to escape through?
Yes to all those things? I mean, it would be a summoned monster or familiar instead of a drone, but yes.

Most of the regular Infusions are buffs you put into an object. Each object can only hold one infusion.

Replicate Magic Item isn’t infusing an object; you’re basically cobbling stuff together out of fluff. Even if it required a base item, you could just have 3 whatevers since you’re making 3 separate Pipes of Haunting anyway.

No, the clear intent is one item per infusion known. Replicate magic item is an infusion.

You can take replicate magic item multiple times, but each item only once.

I think the omission of the word “different” in the description makes it clear that their intent was for you to be able to take it multiple times for the same item, but 1 Pipe of Haunting at level 6 is super strong either way 😀
