I'd happily run a couple of characters. A squire, a level or two behind the main PC sounds cool.Two characters each might help with the action economy, especially someone playing a wizard. It will also mean if 2 of 3 players respond, that's 4 characters acting. Could help keep play moving.
But I don't think we should do that for 1st level. An NPC or two might be better for (re)familiarizing ourselves with 1e.
