Presumably it cannot rise as a wight if you destroy the body. It does not say.
Perhaps it rises as a shadow (wraith, ghost, or whatever) instead, or not at all.

That depends on the creature that killed you. You don't rise as a wight when killed with the Energy Drain or Enervation spell.

I beg to differ. ;)
The energy drain section in the DMG says you rise as an undead the night after you are slain, and if not otherwise specified as a wight.
And the spell descriptions in question do not state anything different.

Can you support that? I hadn't noticed it before, but in fact the DMG does seem to indicate (p. 76) that by default, you become a wight:

A character with negative levels at least equal to her current level, or drained below 1st level, is instantly slain. Depending on the creature that killed her, she may rise the next night as a monster of that kind. If not, she rises as a wight.
