Guinan's home planet was destroyed by the borg. We see her on Earth in the time of Mark Twain. If we presume Guinan became a wanderer (and came to Earth) because of said destruction, than the Borg were about assimilating people back whjen we were still using steamboats.

Guinan might have visited Earth during Mark Twain's day but her world wasn't destroyed until later. Generations shows Capt. Kirk and company trying to rescue the survivors from Guinan's home world.

Not likely, unless there's a serious continuity error. In TNG's time, the Borg were still in the Delta quadrant, very far from humanity. It takes the power of Q to get the Enterprise-D into Borg space. And, after the Borg's first appearance there, they spent a long time trying to find humanity. The idea that any ship in Kirk's time (especially a new Enterprise just leaving Earth) would have been anywhere near Borg space is not particularly plausible.

In Generations, IIRC (I may not, as it's bee a while since I've seen it), the Enterprise is trying to save a ship from the "energy ribbon". A member of Guinan's species just happens to be on the ship - presumably after the Borg destroyed his homeworld.

I seem to recall Guinan saying at some point in some movie or show that they had wandered in exile for a very long time after the Borg nearly destroyed their race. I also remember her asking Data if her Father had sent him in the Twain episodes, though I forget if she mentions more about where her Father is located or what circumstances brought her to Earth. I got the impression she was traveling out of curiosity rather because she no longer has a home world.

I guess my question has been answered, no we did not see the beginning of the borg with the self repairing station and the people for CPUs.
