Ah, fulsome fireball, how do I miss your ability to fill your full 33,510 cubic feet of space. Backdraft in all but name, you once enflamed my passions but now your ability to singe entire unwary parties is gone...

...but not forgotten.
 

Schools of magic

Spells that are several paragraphs long (I'm sure many won't miss them, but I personally really enjoy these kinds of spells, especially the one that have enough vagueness built in to use them creatively in the middle of a battle.)

Varying resource management

And I seriously frown at the removal of rolling a handful of d6's for fireball damage. I completely understand the issues with the underlying math, but so what? :) Some of my best memories of this game going all the way back to the 80's are the anticipation and joy of seeing that handful of d6's being rolled against your enemies (even considering it was rarely my PC doing it), as well as the dread when the DM rolls that handful against us. Even if the math isn't perfect, seeing that handful of d6's tumbling across the table is fun.

Farewell page-long NPC Statistic Blocks. You provided us with all sorts of information we would never need about fodder characters. You were the very definition of bloat. Fare thee well, for you shall not be missed!
 

Goodbye flat damage multipliers. I will miss you and your insane damage potential. Goodbye two-handed power attack combined with ever-increasing ways to garner attack bonus.

Goodbye paladin doing a Spirited Charge smite with Rhino's Rush spell and power attacking for -10 hit/+20 dmg. Doing over 200 points of damage in a single hit, we lay you gently to rest.

Per Encounter is no longer Vancian, at least not to me. The shortcoming of Vancian magic was that the only way to recover your resources was to rest.

I think I might miss a little of the flavor they provided. But after seeing the PHB spread where Bigby's Forceful Hand (or something like that) was described, I am no longer worried that 4E might have removed the interesting and oddball kind of spells...
