If by D&D book you mean Wizards of the Coast produced products, I'd say probably Manual of the Planes. If by D&D book you mean any d20 book compatible with D&D, I'd say Monsternomicon although the Book of Fiends gives it a real run for its money.
 

Oh, good heavens. I can't just pick one. (I'll stick with D&D meaning "TSR/WotC products".)

BD&D = Keep on the Borderlands
1e = I3-5 Desert of Desolation
2e = 2e FR box set
3e = Serpent Kingdoms

Arnwyn is right - it's hard to pick just one...

My fave "books" (i.e. not adventures) would have to be:

the AD&D 1st edition DMG
Valley of Dust and Fire for Dark Sun
Third edition Uearthed Arcana
The Planeswalker's Handbook for Planescape (makes the 3.5 "Planar Handbook" look downright bad in comparision)
The third edition FRCS

Other books have been good, without a doubt, but these books started it all for me and still are hallowed in my home :)

I have a number of other books and adventures that I like, but these are my favorites.
 

My favorite book (from WotC) would have to be either the FRCS, Eberron, or OA. Now the book that I've been using the most lately is Savage Species.
