Just started rereading the book; while I think the series succeeds on its own, it inevitably leaves out a dragon's hoard of detail.
Jon Snow seems much cooler in the book and quite different from his brothers. There's little about his initial sacrifice in order to save the dire wolves. The wolves are also puny; Martin describes them as being twice the size of Bran's pony.
The nature of Robert and Ned Stark's relationship is glossed over. And Catelyn, of course, is more of a central figure in the story.
