Given Unlimited Time, I'd play/GM...

Some campaigns I'd like to run if I had unlimited time:

GURPS Traveller Interstellar war-- players would be either crew of a big capital ship, or a group of admirals. Would include interstellar combat and role playing between battles.

GURPS Traveller Ringworld-- use the Chaosium Ringworld background but with Traveller stuff / mechanics.

Wild West Campaign-- Probably with GURPS but maybe the original Boot Hill set?

D&D Thieves' World-- Would love to run a campaign in this low magic setting.

GURPS or d20 Ancient Rome-- Have a good idea for a campaign here.

Call of Cthulhu Walker in the Wastes. Have it but never ran it, looks fun.

Space 1889 Campaign, probably again with GURPS but maybe d20.

For me, system doens't make much difference, I'll use anything that is fast and easy (d 20 or GURPS lite).

Toss in a regular series of one shot All Flesh Must Be Eaten games, and I'd be a happy Keeper/Dungeon Master/Game Master/Marshal/Zombie Master.

nope, it isn't out yet - but (a) I have the playtest files right here, and (b) I wouldn't find the time & players for this before spring 2006 anyway ;)

probably not - but are the maps for those (legally!) available online?
Right now I have a map in the making that looks like Africa (which ends south of the equator) was fused with Europe at Gibraltar, and Ireland & the British Isles have been attached to continental Europe near Denmark. Also the Red Sea and the Persian Gulf are gone, most of India became a couple of remote islands way down south, and East Asia ends at Vietnam and has almost no islands (incl. Japan, Indonesia, etc.).
I intend to use this continent to introduce lots of additional races from GURPS Fantasy Folk and GURPS Aliens into the setting, especially the Bale and the Kaa...
 

Exalted, TORG, a couple of different D&D campaigns (Eberron, and conversions of Spelljammer, Dark Sun, Planescape, and Al-Qadim), Mutant: Undergångens arvtagare (Swedish post-apocalyptic game), Adventure!, Iron Heroes, and Arcana Evolved. For starters.
 

My dream game: Call of Cthulhu, taking place in Russia in 1920, where the characters are members of an early Soviet expedition to Tunguska (IRL the first expedition was in 1927 IIRC, but with the Stalinist revision of history it'd be quite easy to cover up earlier ones). Civil War all over, deadly politics, strange things in remote Russian villages, Ghouls, Deep Ones making pacts with White generals; and later on, whatever alien horror which has crashed in Tunguska. The reason why I probably will never play this is the need of detailed historical preperations, the need for dead-serious roleplayers players (a requirement of CoC in general) and the scope of the thing.
