I have a super easy chili recipe that I love making. It's a vegetarian sort of thing, and it's amazing. Just add to a crockpot and go!
You can also add some stewed tomatoes, if you like. And a few diced jalapenos will make it hotter - if you want, you can sub in jalapenos instead of serrano, but I prefer serrano peppers.
Regarding the beans & corn: Dump them all in a bowl, and drain of the juices. Fill the bowl up with water, and let them sit overnight (or at least for a few hours). this will "clean" the beans, so that their colour doesn't seep into the chili and make it look super ugly.
- One large can of diced tomatoes, preferably the "chili" mix variety.
- two tablespoons of dried chili peppers
- one serrano pepper, sliced super thin (lose it if you want a mild chili).
- Old el Paso chili mix, one bag (just dump 'er in!)
- two carrots, diced.
- One onion (I like the purple ones, the purpler the better!), sliced thickly
- One cup of mushrooms, sliced thinly.
- One can of kidney beans (see below)
- One can of black beans (see below)
- One can of chick peas (see below)
- One can of lentils (see below)
- 2 cups of Celery, sliced thick
- one can of corn kernels (see below)
- 1/2 cup of louisiana hot sauce
- 1 can of tomato paste
- 1/4 cup of sugar
- a couple of tablespoons of brown sugar
