A concept I have yet to play (but fully support in my mind) is a Dwarven Monk.
This dwarf has embraced the Way of Stone, becoming so in tune with Stone that he has taken on some qualities of Stone itself. (Depending on your DM, you could trade out Monk abilities for Nature related stuff). He is primarily a fist warrior, whose punches can smash stone; he is as immovable as a mountain (by giving him something like Immovable Stance). Make him a puncher/wrestler, maybe copy some aikido stuff? You could even make this guy a Monk/Druid...
Maybe your DM is nice and you could do some sort of Barbarian/Monk combo, earning DR instead of other abilities, maybe even Stoneskin *LOL*.
Another concept, same character:
This dwarf has been raised by a Barbarian tribe who honour the Boar as their animal of Strength. The dwarf is every bit like a regular dwarf, but more animalistic in nature. He prefers to fight hand-to-hand, as brutally and efficiently as possible. Jumping on enemies, tackles, stomp when they're down, throws... essentially attacking his enemies the way an animal would. He prefers to eschew weapons in favour of pummeling his enemies into the dirt and dragging back their beaten corpses to his lair, as trophies. You could even go the distance and make him cannibalistic, believing that by consuming the flesh of his enemies he consumes a piece of their strength as well.
One more:
Dwarven Enchanter. This dwarf is the antithesis of your 'typical' dwarf. Lazy, shuns hard work in favour of foppery, quests for wealth at the expense of other fellow dwarves. Dresses in fine clothes, vain, arrogant. He could almost be described as 'evil', as he is willing to associate with 'evil' races so long as they cut him the better deal. He prefers to use his magic to manipulate folk into doing his bidding. On the rare occasion he creates a magic item, it is always for profit and could care less who wants it or why so long as the price is right. He has the attitudes of your typical "grey dwarf", but he is not one. Perhaps his whole clan are known thieves and hoarders of wealth, valuing coin above blood. They do not embrace the concept of 'clan' or 'family' outside of their own circles.
I don't play dwarves that often (almost never, in fact), which is why these concpets are so burnt into my head -- something new for me to try.
