I'll post comments as I read. The interview with Morrus was nice. Most of it of course I have already gleaned from this board, but much of it is interesting nonetheless. I also think that the interview with him is a fitting start to the magazine.

Would anyone eat watercress were in not in a sandwich? I remember the first time I served those at a party...oh it was horrible. No one knew what to make of them, and when I told them what they were everyone faked an English accent for the remainder of the evening.
