You can convert spell slots (including your Warlock spell slots, which come back every short rest) into sorcery points and then feed them into quicken spell. For single-target damage, it's probably the most effective use of your spell levels. You can even stack empowered spell on them if you really want to nova.I don't see a way to have the Sorcerer benefits outweigh the benefits of going pure Warlock - you don't get enough spell points or spells to make the sorcerer mechanics worthwhile. Am I missing some technique that would allow for a lot of quickened Eldritch blasts?

Having even a few levels of sorcerer (or another caster) also lets you use a 1st-level slots for Hex and use your higher-level warlock slots on bigger spells.
As an example, a sorcerer 5 / warlock 5 could cast Hex 4x per day and use quickened Eldritch Blast 11x per day plus another 3x per short rest. It's enough to keep double Eldritch Blasts going pretty continuously if that's all you do, and of course you can trade them for casting other spells as well.
Increase spell DC, by increasing spellcasting ability in the warlocks case charisma or getting magic items that do so. Items that increase spell DC from the DMG are rod of the pact keeper and robe of the archmagi.
More spell slots there is multiclassing and a few magic items like pearls of power and rod of absorption.
Tiamat being immune to any spell of level 6 or lower she wants to be, having saving throws that range from +8 to +19 and advantage on saves vs magic, and 5/legendary resistances to use if spells get past that, I would say no spellcaster trying to effect her directly is going to have a chance. Buffs, support, using the help action to let a melee person hit her AC of 25 all sound like better options that attacking her with spells.

How does Tiamat's spell immunity work? Does she have to choose which spell(s) she's immune to in advance, or can she change them on the fly?
She is just immune to any spell of 6th level or lower unless she wants to be affected by it. A CR 30 Deity should be almost impossible to kill, and she is. I can't see a group of level 20's taking her out unless they bring an army with magic weapons.
