Yes, mint with coffee = very good. A most excellent recipe: a couple of pumps of the good white chocolate syrup of your choice, a tablespoon of crushed peppermints (the red and white swirly kind, or candy canes), a shot or two of espresso, steamed milk, whipped cream and a few more mints. Yum!
As to the no coffee pot at work problem, I can think of two possible solutions that don't involve instant or folgers.
One would be to get yourself a french press. Stick coarsely ground coffee in the bottom, nuke some water, add it to the grounds, steep and push down the filter. Pros: it's a great way to make coffee, especially dark, rich roasts. Cons: You have to wash out the pot and it might be more work than you want to put into it at work.
The other would be to MAKE yourself some of the single serving pouches. Get small filters (either for coffee, or maybe those sachets they sell for loose leaf tea) add a good quality ground coffee (two heaping tablespoons for every 8oz of water your mug holds), fold the edge over, staple, and voila! just add really hot water (just off the boil), steep for about four minutes, and you're done!
You'd want to make up your pouches only about a week's worth at a time, so your coffee doesn't go stale, and keep them in an airtight, opaque container.
