How do you wear a third magic ring?

The lo-tech "Lassviren" solution is just to put each ring on a short chain attached to a bracelet. While you can't have more than 2 active, switchout should be a breeze.

Which two would people wear?

For ambushes would you like to have evasion for no damage on surprise area spell assaults? Or deflection bonuses for physical attacks when flat footed and denied your dex? Or freedom of movement for surprise grappling or those hindering spells?

All three are great to have as default defenses when surprised.
 

while this wouldn't fit your PARTICULAR situation, methinks there was a mindflayer prestige class that allowed one to wear a certain number of rings on one tentacles. Just thought I'd throw that in there.

Well.. yeah.. that too.

But of course, you could just pay to add amulet enhancements onto your hand of glory as per the item pricing rules in the DMG.

As my dad is so fond of saying..."These are personal choices."

The PC, via his player, must make a decision based upon what they know...

What situations do they find themselves in most often? Which rings give the best benefits in those situations? What do they know from stories about other adventurers?

That's what we do with rings when you want more than 2 and have the extra cash to pay for the extra enchanting.
